The Science of the Cross: Kuroge X Holstein
The Two Breeds:
Japanese Black (Kuroge Washu): This is the purebred Wagyu side of the lineage. It provides the elite intramuscular fat (marbling) and the signature buttery, melt-in-your-mouth texture.
Holstein: This is the traditional dairy breed. In the F1 cross, the Holstein genetics contribute a larger "eye" of the meat (a bigger cut) and a more robust, "beefy" flavor that balances the richness of the Wagyu fat.
